Sourdough loaves

I ran out of yeast so I made a couple of loaves using just the sourdough sponge. I have added yeast in the past, but these loaves worked great without any added yeast. I wanted to make 2 loaves so I upped the recipe.

2 cups sponge
1 cup milk scalded
4 t salt
2 T sugar
4 T shortening
6 cups flour
Since this recipe was too large for the mixer I ended up kneading it by hand for a good 10 mins. I had to add flour as I went, the loaf was sticky. It rose in the afternoon and I formed 2 loaves and decided that since the loaf was good a stretchy I would try letting it rise on a sheet pan instead of using a loaf pan. Apparently it worked well. One of these is going to Jerrin.

Bagel Day Take 2

I did a baby sponge and I am making it into bagels. I am using:
        2 cups of starter
        1 1/2 t yeast
        1 T sugar
        2 t of salt
        4 cups flour
        1 Cup water
        Boil 30 seconds each side
        425-450 15 to 20 mins
I let it knead in the mixer for at least 15 mins. It was a little wet so I dusted some more flour in the mixer. I ended up with a very sticky dough. I let it rise while I went to ride in the park. I meed to remember to dust the balls of dough when I form them. OK I cut the dough into 12 pieces, formed balls, and made sure they were dusted and not sticky. I am letting them rest a bit, and then I will form them and let them rise again before I boil them. Boiled them without major mishap, and dressed them with my sesame seed and garlic mixture and baked for 18 mins. They are great!
